Prologue: Reliable Comfort Food

GAMBAS (P400)

I’ve never been shy of my love for Prologue. Everything about it (save for its parking space that gets packed and tight real quick) is amazing: from its interesting food selection to the wallet-friendly prices of their items; from its delicious complimentary house bread to its fragrant cups of coffee; from its cozy interiors to its warm service!

SQUASH RISOTTO (P250)

Its Gambas boasts of plump juicy shrimps served in a sizzling hot skillet filled with to-die-for garlicky olive oil. The kitchen adds slices of Parma ham to heighten the smokiness of the dish. Make sure to save some of its house bread as it serves as the perfect instrument to soak up all of the goodness in that skillet.

BUTTERMILK FRIED CHICKEN (P430)

Unfortunately, its take on the comfort food classic, Buttermilk Fried Chicken, is a bit lukewarm. for me It’s a far cry from the likes you’d get from Kettle or its sister concept, Fireside; especially since its fried chicken simply tasted like regular fried chicken; but it’s juicy enough and came with a generous serving of gravy and delicious homemade wedges to satisfy a craving.

HOKKAIDO SCALLOP AND SHRIMP RISOTTO (P980)

Its Hokkaido Scallop and Shrimp Risotto is an absolute treat! Stewed in a tasty bisque sauce, this risotto will not leave you in want of flavor. Of course, each bite of that scallop and shrimp elevates the experience; but there weren’t too much of both to be shared! It’s a delightful dish that I love, but it’s so far the only item I’ve tried on its menu that may not be worth its price tag. Its Squash Risotto, which is only a quarter of the Hokkaido Scallop and Shrimp Risotto’s price should be more than enough to keep you happy. Sure, the Squash Risotto swaps premium seafood items for good old crunchy bacon; and it doesn’t come with the absolutely divine bisque sauce but it definitely can hold its own (and save you enough money good for another main dish or two)!

IBERICO PANCETTA CARBONARA (P250)

Another item that’s easy on the wallet would be their Iberico Pancetta Carbonara. Easily the cheapest carbonara I’ve seen for a restaurant of this caliber; Prologue’s goes all out by using delicious sizable chunks of pancetta and topping it with poached egg. To be fair, it tasted just okay; but the quality of ingredients used makes its P250 price tag a steal!

QUATTRO FORMAGGI (P470)

It took two attempts for me to get to try the Quattro Formaggi. My first attempt was when I had a night out with my barkada. The restaurant was extra packed that day; and unfortunately, the kitchen missed out on preparing our pizza. We just ended up swapping our Quattro Formaggi for extra slices of their delicious cakes. However, I couldn’t let go of that missed opportunity so I made sure to order it on my next visit. Using a blend of Mozzarella, Gruyere, Gouda and Gorgonzola, the Quattro Formaggi fully delivers on every bite. A little sprinkle of chili flakes or chili oil is all it needs to be perfect. Its wonderfully stretchy and gooey cheese topping is wonderfully laid on an equally wonderful crust. As it hails from the same kitchen as their freshly baked house bread, it’s no wonder that the crusts of their pizza refuse to take a backseat. Eating the crusts won’t be a chore as they’re delicious on their own right; you won’t need to stuff it with cheese or bacon to be able to enjoy it!

a.mano’s take on this classic flavor is still my undisputed top choice; but Prologue’s Quattro Formaggi is definitely a strong contender!
