Prologue - Other Things to Rave About Apart from their Bread and Coffee


I’ve always been a fan of Prologue – ever since it opened its first branch in QC. Since then, it has expanded to Makati, BGC and San Juan (and yes, I’m proud to say that I’ve tried all of them already). Just a bite of their freshly-baked sourdough bread and a cup of their immensely fragrant coffee (personal favorite is the Hiro Blend) and I’m instantly in heaven. The delicious fare that comes after is already a bonus.


CRAB MEAT CHILI TOMATO TAGLIATELLE (P470)

The Crab Meat Chili Tomato Tagliatelle is a hearty seafood-forward pasta dish that marries the classic arrabbiata – spicy and filling tomato sauce made aromatic by olives and basil – with a generous serving of shredded crabmeat.


GRILLED IBERICO PORK CHOPS (P950)

Their Grilled Iberico Pork Chops was simply heavenly – incredibly tender and juicy – and paired with a fresh arugula salad topped with parmesan cheese. It also comes served with delicious ratatouille and a basil pesto sauce. This is perfect for sharing – but honestly, I wouldn’t mind having one to myself.


TRUFFLE MUSHROOM TAGLIATELLE (P490)

The Truffle Mushroom Tagliatelle delivers with its creamy sauce topped with button mushrooms and parmigiano. It’s a far cry from Mamou’s Lorenzo Cream Pasta, but it’s a decent version of it.


FROMAGE GALETTE (P390)

A selection of galettes make the menu of Prologue GH a little more interesting – my friends and I excitedly tried its Fromage Galette, which boasted of four cheeses – mozzarella, parmigiano, gorgonzola and gouda, all delicately wrapped in a thin but slightly burnt galette. Unfortunately, the bitterness wasn’t masked by the sous vide egg it was topped with. The less than perfect execution of the galette made me think of Café Breton – and how, despite many years of frequenting its multiple branches; has yet to disappoint me with its offerings.


PROSCIUTTO RUCOLA (P730)

Pizzas are another must-try in Prologue – a personal favorite would be the Prosciutto Rucola – sourdough pizza lightly dressed in a stewed tomato sauce and topped with prosciutto, arugula, cherry tomato and shaved parmesan – boasting of a nice balance of textures and flavors. One observation though would be that the amount of toppings isn’t consistent across branches – when I had it in Aruga, Rockwell – it was overflowing with toppings; in GH – it was just alright; while in QC – there were significantly empty spots – all within a period of two weeks (yes, unintentionally, I ended up dining in all three branches in such a short span of time).


BUTTER MILK CHICKEN (P490)

I’m not the biggest fan of Prologue’s Butter Milk Chicken, but I do end up ordering it every now and then because it’s really the most affordable main dish that’s perfect for sharing – somehow, no matter what the branch, I find that the chicken’s not marinated enough; the skin’s not as crispy as I’d like it to be; and their wedges need to be seasoned a little bit more.
