Skai: Lunch on the 70th Floor

We were lovingly hosted for lunch by our dear family friends, Uncle Peter Soh and Auntie Guat Wah Soh – and boy, were we treated to a gorgeous view of the city. Located atop the 70th floor of Swissotel the Stamford hotel, it’s pretty difficult not to be amazed.

However, apart from that, the interiors of Skai restaurant are equally as impressive. I thought it would be an extremely uptight and formal establishment but its setting was fun and eclectic but still very much put together. Most of its seats were comfortable couches and sofas that lend an air of familiarity amidst the natural air of sophistication in the place.

Skai offers a special seasonal lunch menu, where you can choose having two or three courses (Appetizer – Main – Dessert - or any combination of two). Premium options are also available for more discerning diners.

We were treated to a wonderfully fluffy house bread that was a delight to pull apart – it came with a delightfully dressed-up butter which was equally a delight to devour.

The cod was a delightfully refreshing cold appetizer – the cod meat may be mashed in with potato; but don’t worry – its natural saltiness isn’t lost in the mash. It’s served with a fresh slice of avocado and an interestingly crisp crostini which serves as a nice vessel to pair it with.

For my main dish, I opted for the Chicken – the plate featured a beautiful slice of chicken with meat which was immensely juicy and skin that’s impeccably crispy and gorgeously golden brown. This is paired with black garlic ketchup and gravy as well as a beautiful potato pave.

Definitely, such a memorable dining experience!
